Roasted Acorn Squash with Carrot Salad

I love a stuffed squash, and whether you have a butternut or acorn squash sitting in your pantry you can turn it into a healthy dinner in less than two hours – the majority of that time is the roasting / baking. In this dish we’re using meat, but it’s easily turned vegetarian with some slight alterations.

Roasted Peppers and Sausage

One of the great summer-time side dishes is roasted peppers. You can usually get a bag of assorted peppers at the store in orange / yellow (not bell peppers). You’ll want to look for those that are just a few inches in length and still have their bright green stems.

Shrimp and Tortellini

Quick, easy, and perfect for an afternoon on the back patio. The combination of grilled shrimp and pasta is an excellent summertime treat.
